Ingredients

1 cantaloupe , cut into bite-sized pieces ( about 5 pounds , and remember , when selecting , less green means more ripe )
3 tablespoons extra virgin olive oil
1 tablespoon cider vinegar
1 tablespoon sugar
1/2 cup prosciutto di Parma , torn into small shreds ( about 4 ounces )
3 tablespoons fresh chives , snipped ( almost all of a 1 ounce cello package , plus additional for garnish )
1/4 teaspoon fresh ground pepper ( to taste )
1 loaf crusty country bread ( about 1 pound . Publix Supermarket has a Tuscan Boule that I like alot )
olive oil , for broiling
8 ounces fresh goat cheese
This Cantaloupe and Prosciutto Salad is a perfect summertime dish. It is refreshing, light, and flavorful. The sweet and juicy cantaloupe pairs perfectly with the salty prosciutto and tangy goat cheese. The rustic croutons add a satisfying crunch to the dish. Instructions

1.Preheat your broiler to high. Cut the bread into 1.5 inch cubes. Toss them with 2 tbsp olive oil. Spread them on a baking sheet and broil until lightly toasted, stirring often. This should take around 5 minutes.
2.In a bowl, whisk together the remaining olive oil, cider vinegar, and sugar until combined. Season with pepper.
3.Add cantaloupe, prosciutto, chives, and goat cheese to bowl and toss until all ingredients are coated.
4.Add croutons and gently toss again. Serve immediately garnished with extra chives.
