Ingredients

1 large lemon , peeled and white pith removed
1/2 cup all-purpose flour
1 lb extra firm tofu , cut into 1/4 inch-thick slices
salt & freshly ground black pepper
2 tablespoons olive oil
1/3 cup dry white wine
4 ounces white button mushrooms , thinly sliced
2 tablespoons capers , drained
2 tablespoons minced fresh parsley leaves
2 tablespoons butter or 2 tablespoons soy margarine ( optional )
Tofu Piccata is a vegan version of traditional chicken piccata. Instead of chicken, the dish is made with tofu, which is a popular plant-based protein. Instructions

1.Grate the lemon zest and set aside. Squeeze the lemon juice into a small bowl and set aside.
2.Spread the flour on a plate, and season the tofu slices with salt and pepper. Coat the tofu slices with flour on both sides and shake off the excess flour.
3.Heat the olive oil in a large skillet over medium-high heat. Add the tofu slices and cook until golden brown on both sides, about 3 to 4 minutes per side. Remove the tofu slices to a plate and set aside.
4.Add the white wine to the skillet and bring to a boil, scraping the brown bits from the bottom of the pan. Allow the wine to boil for 1 minute. Add the mushrooms, capers, and lemon zest to the skillet and cook until the mushrooms are tender, about 3 minutes.
5.Add the lemon juice and parsley to the skillet and stir to combine. Add the butter or soy margarine to the skillet and stir until melted and well combined.
6.Return the tofu slices to the skillet and spoon the sauce over the tofu slices. Cook until the sauce is hot and bubbly, about 1 to 2 minutes.
