Ingredients

36 pieces ravioli
1 1/2 cups shelled walnuts
4 tablespoons unsalted butter
200 ml olive oil
1/2 cup parmesan cheese , freshly grated ( I use jarred , just as good )
100 ml heavy cream

Instructions

1.Cook the ravioli according to the package instructions and strain.
2.While cooking ravioli, in a food processor, combine the walnuts and parmesan cheese and pulse to combine until the walnuts are ground.
3.Heat the olive oil in a medium saute pan over medium heat. Add the butter and melt.
4.Add the walnut mixture and whisk in the heavy cream.
5.Season with salt and pepper to taste.
6.Add the cooked ravioli into the sauce and toss gently.
