Ingredients

1 tablespoon olive oil , plus extra for greasing
250 g fresh lasagna sheets
250 g ricotta cheese
50 g rocket
650 g pasta sauce
50 g cheddar cheese , grated
Ricotta and Rocket Pasta Pockets are an Italian dish that can be eaten as a main course or a side dish. The dish is simple and easy to prepare and is perfect for any occasion. It is made by rolling ricotta and rocket inside cooked lasagna sheets, served with a tomato-based sauce, and baked with cheddar cheese on top until golden brown and bubbly. Instructions

1.Preheat the oven to 200°C (or 180°C fan)/ 400°F/gas mark 6.
2.Bring a large shallow pan of water to the boil, add a pinch of salt and drizzle of oil.
3.Cook lasagna sheets 2 at a time for 2-3 minutes each until al dente.
4.Place them on a lightly greased surface, and cut them in half.
5.In a mixing bowl, add the ricotta cheese and rocket, and stir well.
6.Lay out the lasagna sheets and place ½ tsp of mixture on one end of each strip, and then roll it up tight.
7.In a baking dish, pour pasta sauce on the bottom and place roll-ups on top.
8.Sprinkle the grated cheddar cheese on top.
9.Cover with foil and bake in the preheated oven for 20-25 minutes.
10.Remove the foil and let it cook for an additional 5 minutes, or until the cheese is bubbly and browned.
