The Fried Mortadella Sandwich is a spin on traditional fried-Mortadella – a popular Italian-style sausage made from finely ground pork and beef mixed with spices and herbs. Fried Mortadella is typically eaten as a snack or appetizer, but this recipe takes it to the next level by turning it into a hearty sandwich. The sandwich is made up of a combination of sautéed potatoes, onions, and diced pimiento peppers, along with pan-fried mortadella, cheese, and a fried egg. The result is a filling and satisfying sandwich that is perfect for any time of day.

Instructions

1.In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced potatoes and sliced onion, and sauté for 10-12 minutes or until the potatoes are fork-tender.
2.Add the diced pimiento peppers to the skillet and continue to cook for an additional 2-3 minutes. Remove the skillet from the heat and set aside.
3.In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the sliced mortadella sausage and cook for 1-2 minutes on each side, or until lightly browned.
4.Preheat your oven's broiler. Place the hoagie buns on a baking sheet and spread each side with spicy brown mustard. Place a slice of Swiss cheese and a slice of Asiago cheese on each bottom bun, then top each with equal amounts of the potato mixture and mortadella.
5.Crack an egg into each skillets and cook to your desired consistency. Place an egg on top of each sandwich and top with an additional slice of cheese.
6.Place the baking sheet under the broiler for 1-2 minutes or until the cheese is melted and bubbly. Serve hot and enjoy!
