Ingredients

85 g raspberry jelly crystals
1 cup boiling water
1/2 cup cold water
50 ml Frangelico
3 eggs
1/3 cup caster sugar
250 g mascarpone cheese
300 ml thickened cream
24 Savoiardi cookies ( Sponge finger )
1 cup berries
125 g almonds

Instructions

1.Dissolve raspberry jelly crystals in boiling water, then mix in cold water and Frangelico and set aside to cool down.
2.Combine eggs, caster sugar, and mascarpone cheese in a bowl and beat together until well combined.
3.Add thickened cream and continue beating until the mixture is smooth.
4.Dip Savoiardi cookies in raspberry jelly mixture to soak them.
5.Arrange soaked cookies in a tray, then layer with a portion of berries and almonds.
6.Cover with a layer of the mascarpone mixture and repeat the process, alternating soaked cookies, berries, almonds, and mascarpone mixture.
7.Top off with the remaining sliced almonds.
8.Chill for at least 4 hours or overnight before serving.
