4 lbs boneless beef chuck roast

2 onions , sliced
1 teaspoon salt

1 3/4 cups beef stock or 1 3/4 cups beef broth
1 ounce dried porcini mushrooms
1 -2 sprig fresh rosemary , plus
extra fresh rosemary , for decorating

Instructions

1.Preheat the oven to 325°F.
2.Season the roast with 1 tablespoon salt and 1 tablespoon pepper.
