Ingredients

2 tablespoons olive oil
2 onions , chopped
3 carrots , grated
3/4 teaspoon marjoram
3/4 teaspoon thyme
3/4 cup white wine
28 ounces chopped canned tomatoes with juice
7 7 cups vegetable broth or 7 cups beef broth
1 1/2 cups lentils ( rinsed in 4 changes of water )
salt
pepper
1/3 cup finely chopped parsley
1 cup grated cheddar cheese , cheese ( optional )

Instructions

1.In a pot, heat the olive oil and saute the onions until translucent.
2.Add the grated carrots and continue to saute for another 5 minutes.
3.Add the marjoram and thyme and cook for about 30 seconds.
4.Pour in the white wine and bring it to a boil. Let it reduce by half.
5.Add the canned tomatoes and broth. Bring to a simmer.
6.Add the lentils and let it simmer for about 45 minutes or until the lentils are tender.
7.Season with salt and pepper to taste.
8.Add the parsley and stir. Continue to simmer for another 5 minutes.
9.Serve hot with some grated cheese on top (optional).
