Ingredients

4 fresh boneless skinless chicken breasts , pounded thin
1 cup frozen spinach , thawed , and drained well
1/2 cup portabella mushroom , chopped fine
4 marinated artichoke hearts , chopped fine
4 garlic cloves , crushed
1 1/2 cups Fontina cheese , shredded
4 eggs , beaten well
2 cups Italian seasoned breadcrumbs

1/2 cup olive oil
6 tablespoons butter
1/2 lemon , juice of , to 1 depending on how lemony you like it
1 cup sauvignon blanc wine
parsley , fresh

Instructions

1.Preheat oven to 375°F.
2.In a bowl, mix spinach, mushrooms, artichoke hearts, garlic, and 1 cup of Fontina cheese.
3.Lay out each chicken breast and add a spoonful of mixture into each one. Roll them up and secure with toothpicks.
4.In a dish, place beaten eggs, in a separate dish, mix breadcrumbs with salt and pepper. Dip each chicken bundle into eggs and then coat in breadcrumbs.
5.In a large skillet, heat olive oil and butter, and gently brown chicken bundles on all sides.
6.Remove chicken from skillet, deglaze the pan with sauvignon blanc wine and add lemon juice. Simmer for a few minutes.
7.Place the chicken bundles into an oven-safe dish and pour the wine sauce over them.
8.Sprinkle remaining cheese over each bundle.
9.Bake for 25 minutes or until internal temperature reaches 165°F.
10.Garnish with fresh parsley and season with salt and pepper to taste. Serve hot.
