2 eggs , lightly beaten
3/4 cup dried breadcrumbs
3 ounces Fontina cheese , cut into 12 strips ( or Gouda or mozzarella cheese )
vegetable oil , for frying

Instructions

1.Soak the porcini mushrooms in hot water for 20-30 minutes.
2.Drain the mushrooms, reserving the soaking liquid.

5.Roll the mixture into balls approximately 1.5 inches in diameter.

7.Roll the balls in dried breadcrumbs until fully coated.
8.In a large skillet, heat 1 inch of vegetable oil over medium-high heat until hot.
9.Fry the balls until golden brown on all sides, approximately 2-3 minutes per side.
10.Drain the balls on paper towels to remove excess oil before serving.
