Ingredients

1/4 cup olive oil
1 1/3 cups onions , minced
3/4 cup carrot , peeled and minced
3/4 cup celery , minced
1/4 cup Italian parsley , minced
2 garlic cloves , minced
1 tablespoon fresh basil , minced ( or 1 t. dried , crumbled )
42 ounces canned Italian plum tomatoes , half the liquid drained
2 rabbits
2 cups dry white wine
6 bay leaves
3 garlic cloves , minced
2 inches fresh rosemary sprigs ( or 1/4 t. dried , crumbled )
1/8 teaspoon fresh ground pepper
1 pinch ground cloves
3 tablespoons olive oil
10 ounces pancetta , finely chopped

Instructions

1.Clean and debone the rabbits and set aside.
2.Heat the olive oil in a large skillet over medium heat.
3.Add the onions, carrot, celery, parsley and garlic to the skillet and cook for 5 minutes stirring occasionally.
4.Add the tomatoes (with half the liquid) and cook for 10 minutes.
5.Add the wine, bay leaves, garlic, rosemary, pepper, and cloves and bring to a boil on high heat then remove from heat.
6.In a separate skillet, cook the pancetta over medium heat until golden brown and crispy. Remove it to a paper towel-lined plate and set aside.
7.Heat the olive oil in a large Dutch oven over medium-high heat.
8.Sear both sides of the rabbit in the Dutch oven until golden brown, then remove from the Dutch oven.
9.Add the tomato mixture from the skillet to the Dutch oven that you used to brown the rabbit, and bring to a boil.
10.Add the rabbit and cook it for 2-3 hours until tender. Top each rabbit with pancetta before serving.
