They are made with fresh ground pistachio flour, almond flour, and unpasteurized honey, giving them a rich nutty flavor and crispy texture. These cookies are perfect for those looking for a healthy snack option or a treat to enjoy with tea or coffee. The distinct pistachio flavor in these cookies makes them stand out from the usual chocolate chip or oatmeal cookies. Plus, not only are they delicious, but they are also loaded with nutrients that can benefit your overall health.

Instructions

1.Preheat oven to 325°F and line a large baking sheet with parchment paper.
2.In a mixing bowl, whisk together the almond flour and pistachio flour. Add the honey and stir until the mixture is crumbly.
3.Fold in the chopped pistachios.
4.In a separate bowl, whisk egg whites until stiff peaks form.
5.Gently fold the egg whites into the pistachio mixture.
6.Using a tablespoon, carefully scoop the mixture onto the prepared baking sheet.
7.Flatten each cookie slightly with the bottom of the tablespoon.
8.Bake for 8-10 minutes or until golden brown. Cool for 5 minutes before moving to a wire rack to cool completely.

PROS

These cookies are deliciously nutty, crunchy, and chewy all at once.

They are also gluten-grain-sugar-free, making them a healthy snack option for those watching their sugar intake or following a specific diet.

CONS

These cookies may be too nutty or dense for those who are used to traditional cookies made with wheat flour and sugar.

Also, they require some effort and time to prepare as fresh pistachios need to be ground for the flour and chopped for the cookie dough.

HEALTH & BENEFITS

These cookies are loaded with nutrients as they contain almond flour (rich in protein and healthy fats), pistachios (high in fiber, protein, and antioxidants), and honey (contains antibacterial and anti-inflammatory properties).
