Ingredients

2 lbs ground chuck ( I 've used extra lean ground beef , and it turns out fine )
1/2 lb ground pork
2 cups Italian seasoned breadcrumbs
4 eggs
1 cup milk
1 cup fresh parsley ( chopped )
1/2 cup grated cheese
1 tablespoon olive oil
2 garlic cloves ( chopped fine )
1 onion ( minced )
1/2 cup pine nuts ( optional )

Instructions

1.Preheat the oven to 375°F.
2.In a large bowl, mix together the ground chuck, ground pork, 1 cup of Italian breadcrumbs, 2 eggs, and 1/2 cup of milk.
3.Add in the parsley, grated cheese, garlic cloves, and onion. Mix until everything is well combined.
4.Toast the pine nuts in a pan for a few minutes until they are golden brown. Add them to the mixture and mix again.
5.Roll the mixture into meatballs, about 1 inch in diameter.
6.Place the remaining breadcrumbs in a shallow dish. Beat the remaining 2 eggs and 1/2 cup of milk together in another shallow dish.
7.Dip each meatball into the egg mixture, then roll it in the breadcrumbs until coated.
8.Place meatballs on a baking sheet, drizzle with olive oil, and bake for 25-30 minutes or until they are cooked through.
