Ingredients

2 aubergines
3 courgettes
2 red peppers

2 medium onions , coarsely chopped
2 garlic cloves , crushed
400 g chopped Italian tomatoes
1/4 cup fresh basil , chopped
350 g goat 's cheese , with a rind
350 g sliced white bread , crusts removed
1 tablespoon green pesto sauce
1 tablespoon chopped fresh parsley
1 tablespoon basil
1 tablespoon chives

Instructions

1.Preheat the oven to 200°C (400°F).
2.Cut the aubergines, courgettes, peppers and onions into bite-sized chunks.
3.Heat the olive oil in a large pan, then add the aubergines, courgettes and peppers and cook for 8-10 minutes until they are softened.
4.Add the onions and garlic and cook for a further 5 minutes until the onions are softened.
5.Add the chopped tomatoes and basil to the pan and mix everything together.
6.Transfer the mix to a large baking dish and crumble the goat cheese over the top.
7.In a separate bowl, mix together the sliced white bread, green pesto sauce, parsley, basil and chives to create the herby crumble.
8.Sprinkle the herby crumble over the goat cheese.
9.Bake in the oven for 25 minutes until the crumble is golden brown and crispy.
