Ingredients

1 lb beef stew meat
1 onion , sliced
7 pepperoncini peppers , de-stemmed , reserve 2 cups pepperoncini juice from jar
2 teaspoons beef stock or 2 beef bouillon cubes
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon oregano
1 tablespoon dried parsley
1 tablespoon dried onion
1 tablespoon paprika
1/3 cup parmesan cheese
1 tablespoon celery seed
4 ounces monterey jack cheese , sliced
8 slices sourdough bread
1 garlic clove
2 tablespoons butter
2 tablespoons mayonnaise

Instructions

1.Add beef stew meat, onion, and pepperoncini peppers into a slow cooker.
2.In a small bowl combine beef stock, garlic salt, and pepper. Sprinkle mixture over the beef and vegetables and stir to combine.
3.Add garlic powder, onion powder, oregano, parsley, dried onion, paprika, parmesan cheese, and celery seed. Stir again to combine.
4.Pour 2 cups of pepperoncini juice over the beef and vegetables. Stir one last time.
5.Cover slow cooker and cook on high for 4-6 hours or until beef is tender.
6.Preheat oven to 375 degrees F.
7.Slice sourdough bread into 1-inch slices and place on a baking sheet.
8.In a small bowl combine melted butter and minced garlic. Brush mixture on both sides of bread.
9.Toast bread in oven for 8-10 minutes or until lightly golden brown.
10.Remove beef and vegetables from the slow cooker and drain any remaining liquid.
11.Place toasted bread slices on a baking sheet and top each slice with beef and vegetable mixture.
12.Top each sandwich with 1-2 slices of monterey jack cheese.
13.Return baking sheet to oven and cook until cheese is melted, approximately 5 minutes.
