2 lamb shanks

Instructions

1.Rinse the dried cannellini beans with cold water and drain them.
2.Season lamb shanks with black pepper, then dust them with all-purpose flour.
3.Preheat the electric pressure cooker on sauté mode. Heat olive oil and add lamb shanks. Cook each side until browned, about 5 minutes per side. Remove and set aside.
4.Add chopped shallots, carrots, celery, and garlic. Cook for 2-3 minutes or until it becomes fragrant.
5.Add in chopped fresh rosemary and pour in dry red wine. Deglaze the pot by scraping the bottom of the pot to release any brown bits.

8.Cover the electric pressure cooker and set the valve to the sealing position. Cook on high pressure for 30 minutes.
9.Once done, let it naturally release pressure for 10 minutes. Quick release the remaining pressure afterwards.
10.Transfer the lamb shanks on a plate and set aside. Discard the rosemary stems and bay leaves in the pot.
11.Use an immersion blender and blend the liquid until you get a smooth consistency.
12.Add chopped parsley to the pot and ladle the beans and sauce over the lamb shanks. Serve and enjoy!
