Ingredients

2 tablespoons olive oil
8 ounces turkey bacon , small dice
1 1/2 cups onions , chopped
1 1/4 cups carrots , finely chopped
3/4 cup celery , finely chopped
1 1/4 teaspoons salt ( to taste )
3/4 teaspoon fresh ground black pepper
2 lbs ground turkey , preferably thighs
1/2 cup dry white wine
2 tablespoons garlic , minced
1/2 cup tomato paste
1 can Italian plum tomatoes , crushed with your fingers , undrained ( juices and all )
1 1/2 cups chicken stock or 1 1/2 cups broth
2 bay leaves
2 sprigs fresh thyme
2 sprigs fresh rosemary
3/4 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 cup evaporated milk
2 tablespoons fresh basil , chopped
This hearty sauce was created by the famous chef Emeril Lagasse. It's a twist on the classic Italian Bolognese sauce, made with ground turkey instead of beef. Instructions

1.In a large pot, heat the olive oil over medium-high heat. Add the turkey bacon and cook until crispy.
2.Add the onions, carrots, celery, salt, and black pepper. Cook for 10 minutes or until the vegetables are soft.
3.Add the ground turkey and cook until browned, breaking it apart with a spoon.
4.Pour in the wine and cook for 1 minute, scraping the bottom of the pot to release any browned bits.
5.Add the garlic and tomato paste and cook for 2 minutes, stirring constantly.
6.Add the crushed tomatoes with their juices, chicken stock, bay leaves, thyme, rosemary, salt, and red pepper flakes. Bring the sauce to a simmer and cook for 20 minutes.
7.Remove the bay leaves, thyme, and rosemary stems from the pot. Stir in the evaporated milk and fresh basil. Serve over your favorite pasta.
