1 cup dried kidney beans or 1 cup navy beans
3 tablespoons olive oil
1 garlic clove , chopped
1 large onion , chopped
1 cup canned tomato
1 cup shelled peas
1 cup shelled fava beans
1 tablespoon chopped parsley
1 celery , chopped
1 carrot , diced
1 cup diced raw potatoes
2 quarts soup stock
salt & pepper
1/2 lb spaghetti , cut into 1/2 inch pieces or 1 cup incooked rice

Instructions

1.Soak the dried beans overnight in plenty of water and then drain.

3.Add in the beans, canned tomato, peas, fava beans, parsley, celery, carrot, potatoes, and stock.
4.Bring to a boil then reduce heat to low and simmer the soup, covered about 1 hour or until the beans are tender.
5.Add the cooked spaghetti or uncooked rice and stir in salt and pepper as needed. Cook until the pasta or rice is thoroughly cooked.
6.Ladle the soup into bowls and serve with a dollop of pesto, grated cheese, or croutons if desired.
