1/3 cup raw almonds
1 1/2 cups water , divided
3 tablespoons cornstarch
3 tablespoons lemon juice

3/4 teaspoon sea salt
1/4 cup cubanelle pepper , destemmed , deseeded , finely diced ( if you ca n't find sub green bell pepper or mild )
1 tablespoon freshly chopped basil
1 tablespoon freshly chopped parsley
1/2 teaspoon crushed red pepper flakes

Instructions

1.Soak almonds overnight and peel off skin.
2.In a saucepan, whisk cornstarch with 1/2 cup water until it dissolves.
3.Add remaining water, oil, nutritional yeast, salt, garlic and onion powder to the saucepan. Mix well.
4.Add diced cubanelle pepper and simmer the mixture on low heat for 10 minutes.
5.Add soaked almonds and crushed red pepper flakes to the saucepan and stir well.
6.Remove from heat and blend the mixture until smooth.
7.Pour the mixture into a lined cheese mold and cover it with cling film.
8.Refrigerate the cheese for at least 8 hours or overnight to set.
