Ingredients

1 tablespoon olive oil
3 ounces pancetta , finely chopped
1 medium onion , finely chopped
1 stalk celery , finely chopped
4 garlic cloves , minced
1 teaspoon dried oregano
1/4 teaspoon red chili pepper flakes , to taste
28 ounces canned diced tomatoes
1 piece parmesan rind , about 5 X 2 inches
2 cans cannellini beans , drained and rinsed
1 quart low sodium chicken broth
1 quart water
1 teaspoon salt
8 ounces small type pasta , such as ditalini
1/4 cup chopped fresh parsley
ground black pepper
grated parmesan cheese , to pass at table

Instructions

1.In a large pot over medium heat, heat olive oil.
2.Add in pancetta and stir until browned.
3.Add in onion, celery, garlic, oregano, salt, and red chili pepper flakes. Cook until the vegetables are soft and fragrant.
4.Pour in canned diced tomatoes and parmesan rind, stir and cook for 5 minutes or until the tomatoes have broken down.
5.Stir in cannellini beans, chicken broth, and water. Bring to boil, then reduce heat to medium-low, cover and simmer for 1 hour.
6.Add in pasta and cook for an additional 10 minutes.
7.Remove parmesan rind, add in parsley and black pepper.
8.Ladle into bowls and serve with grated Parmesan cheese.
