Ingredients

12 garlic cloves
1 1/2 lbs mixed red and yellow tomatoes , quartered
1/4 cup green olives , of your choice halved and pitted
6 tablespoons olive oil , divided
1/4 teaspoon fine sea salt
1 teaspoon fresh coarse ground black pepper , divided
12 ounces dry linguine
1/2 teaspoon crushed red pepper flakes
3/4 teaspoon dried oregano
1/2 cup dry white wine
2 cans baby clams , drained and liquid reserved
Randy's Garlic, Clam, and Roasted Tomato Linguine is a delicious pasta dish that will have everyone asking for seconds. Instructions

1.Preheat the oven to 425°F.
2.Add the garlic, mixed tomatoes, and green olives to a large bowl. Drizzle with 2 tablespoons of olive oil and season with fine sea salt and 1/2 teaspoon of coarse ground black pepper. Toss everything together, then spread out on a baking sheet. Roast in the preheated oven until the tomatoes have burst and the garlic is golden brown, about 25-30 minutes.
3.Cook the linguine according to package instructions and drain when done.
4.Heat 4 tablespoons of olive oil and red chili flakes in a large skillet over medium heat until fragrant, add the dried oregano and cook for 1 minute. Add the white wine, clam juice, and reserved liquid from the canned clams and stir to combine. Cook for 5-7 minutes or until reduced by half.
5.Add the cooked linguine to the skillet, along with the roasted garlic, tomato, olive mixture, drained baby clams, and remaining 1/2 teaspoon of black pepper. Toss everything together, and cook until heated through, about 2-3 minutes.
6.Divide among plates and serve immediately.
