Ingredients

7 ounces pepperoni , sliced
1 lb lean ground beef
1 small onion , chopped
5 garlic cloves , chopped
1 tablespoon italian seasoning
1/2 teaspoon crushed red pepper flakes ( optional )
48 ounces spaghetti sauce ( Classico is our favorite )
salt and pepper , to taste
2 cups ricotta cheese
1 cup shredded Italian cheese blend ( Kraft 5 cheese Italian blend )
4 ounces provolone cheese , chopped fine
2 large eggs , lightly beaten
salt and pepper , to taste
16 no-boil lasagna noodles ( Barrilla flat style )
1/2 cup parmesan cheese , grated
Baked Manicotti With Pepperoni Meat Sauce is a delicious and hearty dish that is perfect for a cold winter's night or a family gathering. The dish is made with ricotta, Italian cheese blend, provolone cheese, and a meaty spaghetti sauce, which all come together to make a flavorful and satisfying meal. Instructions

1.Preheat oven to 375 degrees.
2.In a large skillet, cook the pepperoni, ground beef, onion, and garlic over medium heat until the beef is no longer pink, breaking up the meat as it cooks.
3.Drain any remaining grease from pan.
4.Stir in Italian seasoning, crushed red pepper flakes, spaghetti sauce, salt, and pepper. Reduce heat to low and simmer for 10 minutes.
5.In a separate bowl, mix ricotta cheese, ½ cup of Italian cheese blend, provolone cheese, eggs, salt, and pepper.
6.Spread 1 cup of meat sauce in the bottom of an ungreased 9x13 inch baking dish.
7.Stuff each noodle with about ¼ cup of cheese mixture and arrange the noodles in the baking dish on top of the meat sauce.
8.Pour remaining meat sauce over the top of noodles.
9.Sprinkle remaining Italian cheese blend and Parmesan cheese over the top.
10.Cover loosely with foil and bake for 30 minutes.
11.Remove foil and continue baking for an additional 15 minutes.
