Ingredients

1 lb lean ground beef
1 lb ground veal ( or may use ground beef or ground pork as well )
2/3 cup roasted red pepper , minced
1/2 cup grated parmesan cheese
1 tablespoon minced garlic
1/2 onion , minced
2 eggs
1 cup soft breadcrumbs ( pulse bread slices in your food processor or crumble stale bread with fingertips )
1 teaspoon salt
1/2 teaspoon black pepper
1/2 - 1 teaspoon red pepper flakes ( adjust for preferred spiciness )
1/2 - 1 cup water
1 1/2 - 2 quarts spaghetti sauce
cooked spaghetti ( I use Dreamfield 's lower glycemic spaghetti )

Instructions

1.Preheat oven to 425 F
2.In a large bowl, combine the ground beef, ground veal, roasted red pepper, parmesan cheese, minced garlic, minced onion, eggs, breadcrumbs, salt, black pepper and red pepper flakes. Mix thoroughly with clean hands.
3.Gradually add water to the mixture while continuing mixing with hands until the mixture becomes moistened but not soggy.
4.Grease a baking sheet with cooking spray and roll the meat mixture into 1 1/2 inch diameter balls.
5.Arrange the meatballs in a single-layer on the baking sheet and bake for 20-25 minutes until golden brown and cooked through.
6.While meatballs bake, heat spaghetti sauce on a stove for 5-10 minutes until hot.
7.Toss cooked spaghetti with the hot spaghetti sauce and serve with the baked meatballs on top.
