Ingredients

5 garlic cloves
1 brown onion
1 carrot
1 -2 stalk celery
olive oil
500 g lean ground beef
1 1/2 cups beef stock , about 3 cubes ( good quality ! )
1 cup red wine
1 can chopped peeled roma tomatoes
1 can tomato passata or ( 400 g ) can tomato puree
1 tablespoon sugar
1/4 bunch parsley
salt and pepper
Bolognese sauce is a classic Italian meat sauce typically served with pasta. The sauce originated in the city of Bologna and traditionally contains ground beef, tomato, onion, celery, carrot and red wine. This recipe boasts all the traditional ingredients with the addition of beef stock and parsley for an extra depth of flavour. It is the perfect Italian comfort food and will leave you feeling satisfied and warm.

Instructions

1.Firstly, finely chop the brown onion, garlic, carrot and celery stalks.
2.Saute the chopped vegetables in olive oil over medium heat until they soften and the onion becomes translucent.
3.Add the lean ground beef to the pot and cook until it has browned.
4.Pour in the beef stock, red wine, chopped peeled roma tomatoes (tinned) and tomato passata (or tomato puree) and stir to combine.
5.Simmer the pot, stirring occasionally, for at least an hour (the longer it simmers the better the flavour).
6.If the sauce is too thick and is sticking to the bottom of the pot, add more beef stock to loosen it up.
7.Finally, add salt and pepper to taste and top with chopped parsley.

PROS

The sauce is packed with protein from the beef, and contains vegetables and tomatoes which are a great source of vitamins and minerals.

The flavour is rich, hearty and delicious, perfect for topping pasta, gnocchi or lasagne.

CONS

Some of the ingredients are high in sodium, so those with high blood pressure may want to avoid adding additional salt.

This recipe does take some time to make, so it is not ideal for a quick weeknight meal.
