Ingredients

1 lb Italian sausage
3 large potatoes , peeled and diced
1 cup diced onion
6 slices bacon , chopped
2 teaspoons garlic
1 1/2 teaspoons crushed red pepper flakes ( optional )
3 cups kale leaves , chopped
2 quarts chicken stock ( or 1 Qt Stock/1 Qt . Water )
1 cup heavy cream
Zuppa Toscana is a traditional Italian soup, originally from the Tuscany region. In this recipe, we've replaced the traditional cream with heavy cream. Our version includes Italian sausage, diced potatoes and kale, and is perfect for a comforting and warming dinner on a cold evening. The soup has a creamy and slightly spicy flavor, and is sure to satisfy all your comfort food cravings. Serve it with some crusty bread and a salad for a complete meal.

Instructions

1.In a large pot, cook the Italian sausage over medium heat until browned.
2.Add the chopped onion and bacon to the pot. Cook until the onion is translucent and the bacon is crispy.
3.Add the garlic and crushed red pepper to the pot, and cook for 1-2 minutes, stirring frequently.
4.Add the diced potatoes to the pot, and pour in the chicken stock. Bring to a boil, then reduce heat to low and simmer for 10-15 minutes, until the potatoes are tender.
5.Add the chopped kale leaves and heavy cream to the pot, and stir until well combined. Cook for an additional 5-10 minutes, until the kale is tender and the soup is heated through.
