Ingredients

2 tablespoons unsalted butter
4 teaspoons all-purpose flour
1 1/4 cups 2 % low-fat milk
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 pinch ground nutmeg
1 container fat-free ricotta cheese
1 package frozen chopped spinach , thawed , squeezed dry
1 cup grated parmesan cheese
2 tablespoons grated parmesan cheese
3 ounces thinly sliced prosciutto , chopped
1 large egg , beaten to blend
3/4 teaspoon salt , plus more for salting water
1/2 teaspoon fresh ground black pepper
12 uncooked lasagna noodles
2 cups marinara sauce
4 ounces shredded part-skim mozzarella cheese
Lasagna Rolls are a healthier and lighter alternative to traditional lasagna. They are made with low-fat milk, fat-free ricotta cheese, and part-skim mozzarella cheese. Instructions

1.Preheat oven to 375°F.
2.Melt butter in heavy medium saucepan over medium-low heat. Add flour and whisk for 2 minutes.
3.Gradually whisk in milk.
4.Bring to simmer, whisking constantly.
5.Cook for 3 minutes, whisking.
6.Whisk in salt, pepper and nutmeg.
7.Mix ricotta, spinach, 1 cup Parmesan, prosciutto, egg, 3/4 teaspoon salt, and pepper in medium bowl to blend.
8.Cook lasagna noodles in large pot of boiling salted water until tender but still firm to bite. Drain noodles; arrange in single layer on sheet of foil.
9.Spread ricotta mixture evenly over noodles.
10.Starting at 1 end, roll up noodles.
11.Spread 1 cup marinara sauce over bottom of 13 by 9 by 2-inch glass baking dish.
12.Place rolls, seam side down, atop sauce.
13.Spoon remaining sauce over rolls.
14.Sprinkle mozzarella and remaining 2 tablespoon Parmesan over rolls.
15.Cover baking dish with foil.
16.Bake rolls for 30 minutes, uncover and bake until the cheese is golden on top, about 15 minutes longer.
17.Let stand for 10 minutes and serve.
