Instructions

.Preheat the oven to 375ºF (190ºC).
.Bring a large pot of water to a boil and cook the lasagna noodles according to the package directions.
.While the pasta is cooking, mix together the ricotta cheese, 1/2 cup of the mozzarella cheese, parmesan cheese, and egg in a large bowl.
.Thaw the frozen spinach in the microwave and squeeze out the excess water. Roughly chop it and add it to the cheese mixture. Stir well.
.Spread about 1/2 cup of the marinara sauce on the bottom of a 9x13 inch baking dish.
.When the pasta is cooked, drain it and rinse it under cool water to stop the cooking process.
.Lay each noodle out on a work surface and spread a layer of the cheese and spinach mixture over it. Roll the noodle up tightly and place it seam-side down in the baking dish. Repeat with the remaining noodles.
.Pour the remaining marinara sauce over the top of the lasagna roll ups and sprinkle with the remaining mozzarella cheese.
.Cover the dish with foil and bake for 25-30 minutes.
.Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
