3/4 kg watermelon , flesh only
1 orange , rind removed
1 lemon , rind removed
1/2 cup water
1 cup sugar ( or to taste )

Instructions

1.In a blender, puree watermelon flesh, orange rind, lemon rind, water and sugar until smooth.
2.Pour the mixture into a shallow container and freeze for an hour.
3.Take the container out and scrape the granita with a fork. Return to the freezer and repeat scraping every thirty minutes for 2-3 hours or until the granita is frozen and flaky.
4.Serve immediately in cups or bowls, garnished with fresh mint (optional).
