Ingredients

1 tablespoon olive oil
2 small eggplants , thinly sliced
1 pound ground turkey
1 tablespoon minced garlic
1 can crushed tomatoes
1 jar herb garlic tomato sauce
1 teaspoon crushed red pepper
2 packages frozen mixed vegetables , thawed
1 package shredded Mozzarella cheese
1 package shredded Provolone cheese
1/2 cup grated Parmesan cheese
1 container ricotta cheese
4 egg whites
1/4 cup low-fat milk
1 teaspoon Italian seasoning
Lasagna is a popular Italian-American dish that's loved by many for its comforting, cheesy goodness. However, lasagna can often be high in calories and carbohydrates due to the pasta sheets used in the traditional recipe. This Eggplant Lasagna recipe is a healthier take on the classic dish. By swapping out the pasta sheets with thinly sliced eggplants, this dish becomes a lighter and more nutritious alternative. Instructions

1.Preheat oven to 375°F.
2.Heat olive oil in a large skillet over medium heat and add thinly sliced eggplants. Cook until eggplant is browned on both sides, about 6-8 minutes.
3.Next, add ground turkey and minced garlic to the skillet. Cook the turkey until browned, stirring occasionally.
4.Add the can of crushed tomatoes, jar of herb garlic tomato sauce, and crushed red pepper to the skillet.
5.Simmer for 15 minutes, stirring occasionally.
6.In a separate bowl, mix together the thawed mixed vegetables, shredded mozzarella cheese, shredded provolone cheese, grated parmesan cheese, ricotta cheese, egg whites, low-fat milk, and Italian seasoning.
7.Spread 1 cup of the turkey and tomato mixture on the bottom of a 9x13 inch baking dish.
8.Layer half of the eggplant slices on top of the turkey and tomato mixture, followed by half of the mixed vegetable and cheese mixture. Repeat with another layer of the remaining ingredients.
9.Cover the dish with foil and bake for 40 minutes. Remove foil and bake for an additional 10-15 minutes. Let stand for 5-10 minutes before cutting and serving.
