4 ounces pancetta or 4 slices bacon , chopped
olive oil
6 skinless chicken thighs
2 cans diced tomatoes with onion and garlic
1 cup dried orzo pasta
2 garlic cloves , minced
1 cup water
1/3 cup kalamata olive
1/4 cup fresh basil , torn
1 bag baby spinach leaves
3 ounces garlic and herb goat cheese ( about 1/3 cup )

Instructions

1.Heat a large Dutch oven over medium heat, and add pancetta or bacon. Cook until crispy and transfer to a paper towel.
2.Salt and pepper chicken thighs. In the same pan with pancetta grease, cook chicken until browned for approximately 7 minutes, flip, and cook for another 7 minutes. Remove from the pan.
3.Add minced garlic, canned tomatoes, orzo, and 1 cup of water to the pan. Bring to a gentle boil and reduce heat to a simmer.
4.Add olives and 1/4 cup of fresh basil.
5.Add spinach and stir until the spinach wilts.
6.Add chicken and pancetta to the pan and sprinkle goat cheese over the top. Cover until the cheese melts. Serve and enjoy!
