Instructions

1.In the bowl of a stand mixer fitted with a dough hook, dissolve the yeast in warm water with sugar. Let it stand for 5 minutes until frothy.
2.Add flour and salt, turn the mixer on low speed and knead until the dough is smooth and elastic, approximately 8-10 minutes.
3.Transfer the dough onto a floured counter, shape into a ball, and place it in a greased bowl. Cover with a towel and let rise in a warm place until doubled in size, approximately 1 hour.
4.Punch the dough down and divide it into 8 equal pieces. Shape each piece into a round roll and place it on a baking sheet lined with parchment paper. Slash a deep cross on top of each roll with a sharp knife.
5.Let them rise again for 30 minutes while preheating the oven to 425 degrees Fahrenheit.
6.Brush each roll with egg wash, sprinkle with poppy seeds, and dust them with cornmeal. Bake for 20-25 minutes until golden brown. Cool on a wire rack.
