8 ounces fresh asiago cheese , shredded
6 ounces mozzarella cheese , shredded
3 ounces parmesan cheese , grated
1 1/2 cups ricotta cheese
1 large egg , beaten
3 tablespoons unsalted butter

3 tablespoons all-purpose flour
2 1/2 cups whole milk
1 1/2 cups low sodium chicken broth
1/4 cup plus 2 tablespoons prepared pesto sauce

4 large fresh pasta , sheets
2 tablespoons olive oil
nonstick cooking spray , for coating aluminum foil
1/4 cup pine nuts , roasted
chiffonade fresh basil , for topping

Instructions

1.Preheat oven to 375‚ÑÉF.
2.In a large bowl, combine asiago, mozzarella, parmesan, ricotta, egg, and pesto. Season with salt and pepper.
3.In a medium saucepan, melt butter over medium-high heat. Add shallot and garlic and cook for 2-3 minutes, until fragrant.
4.Whisk in flour until smooth and cook for 1-2 more minutes, stirring constantly.
5.Slowly whisk in milk and broth and continue to cook, stirring constantly, until mixture is thickened and bubbly.
6.Season sauce with salt and pepper to taste.
7.Spread a small amount of sauce in the bottom of a 9x13 inch baking dish.
8.Place 1 pasta sheet on top of sauce, then add 1/3 of the cheese mixture on top of pasta.
9.Repeat layers two more times, then top with remaining pasta sheet and sauce.
10.Sprinkle pine nuts on top of lasagna and lightly press them into the sauce.
11.Cover with aluminum foil coated in nonstick cooking spray and bake for 25 minutes.
12.Remove foil and bake for another 15-20 minutes, until cheese is golden and bubbly.
13.Let lasagna rest for 10-15 minutes before slicing and serving.
14.Top with fresh basil chiffonade before serving.
