3 cloves garlic , minced
3 tablespoons chopped fresh mint , divided

2 teaspoons grated lemon zest , divided

1 1/2 cups uncooked Arborio rice
1/2 cup dry white wine
3 1/2 cups chicken stock

1 1/2 tablespoons fresh lemon juice
1/3 cup grated Parmesan cheese

Instructions

5.Gradually stir in the chicken stock, 1/2 cup at a time, stirring constantly until the liquid is absorbed before adding more.
6.Continue to do this for 20-25 minutes, or until rice is tender and creamy.
7.Remove the saucepan from the heat and stir in the remaining mint, parsley and rosemary, lemon juice, and grated Parmesan cheese.
8.Season with salt and pepper to taste and serve immediately.
