Ingredients

1/2 cup olive oil
2 medium eggplants , cut into 1-inch cubes
1 onion , chopped
3 celery ribs , chopped
6 garlic cloves , minced
1/4 cup tomato paste
1 cup fresh tomato , chopped
1/2 cup green olives , chopped
1/3 cup raisins
1/4 cup red wine vinegar
2 tablespoons sugar
2 tablespoons capers
1/4 teaspoon crushed red pepper flakes
1/4 cup pine nuts , toasted
1 bunch parsley , stemmed and chopped
1/4 cup fresh lemon juice
Fabulous Eggplant Caponata originated in Sicily and has become a popular appetizer all over the world. It is a sweet and sour dish made with eggplant, onions, celery, tomatoes, olives, raisins, capers and pine nuts. Instructions

1.In a large pan, heat olive oil over medium heat. Add eggplant, onion and celery. Cook for 10 minutes or until the vegetables are soft.
2.Add garlic, tomato paste, fresh tomato, olives, raisins, red wine vinegar, sugar, capers and red pepper flakes. Mix well and cook for 15 minutes.
3.Remove from heat and stir in pine nuts, parsley and lemon juice.
4.Serve cold or at room temperature.
