2 -3 garlic cloves , chopped
1/4 cup olive oil
1 1/4 lbs italian sweet sausage , cooked and crumbled
4 shallots , chopped
2 cans tomatoes , pureed
2 teaspoons dried basil

30 ounces ricotta cheese
2 tablespoons chopped fresh parsley
4 large eggs
1 teaspoon sugar
6 tablespoons butter
6 tablespoons all-purpose flour
1 cup milk
1 cup heavy cream
1 teaspoon salt

1 pinch ground nutmeg
1 package no-boil lasagna noodles
2 cups Fontina cheese , grated
3/4 cup parmesan cheese , freshly grated

Instructions

1.Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish.
2.In a large pan, heat the olive oil over medium heat and sauté garlic and shallots until aromatic.
3.Add sausage and cook until browned, then stir in pureed tomatoes, basil, salt, and pepper. Simmer for 20 minutes.
4.In a separate bowl, mix together ricotta cheese, parsley, eggs, and sugar.
5.To make the balsamella sauce, melt butter in a saucepan over low heat. Add flour and stir until smooth. Gradually add milk and cream, stir consistently until thickened. Add salt, white pepper, and nutmeg. Remove from heat.
6.To assemble the lasagna, spread a layer of the meat sauce on the bottom of the prepared baking dish, followed by a layer of lasagna noodles, ricotta cheese mixture, Fontina cheese and a drizzle of balsamella sauce. Repeat layering until all ingredients are used up, finishing with a layer of meat sauce and Parmesan cheese on top.
7.Bake in the preheated oven for 25-30 minutes, or until golden brown and bubbly. Allow to cool for a few minutes before slicing and serving.
