Ingredients

1/2 cup water , cool
1/16 teaspoon active dry yeast ( can substitute instant yeast )
1 cup oz unbleached bread flour , King Arthur
1 teaspoon active dry yeast or 1 teaspoon instant yeast
1 1/4 cups water , lukewarm ( please see water note below )
3 1/2 cups unbleached bread flour , King Arthur
1 1/2 teaspoons salt

Instructions

1.In a small bowl, combine the cool water and 1/16 teaspoon of active dry yeast. Stir and then let sit for 5 minutes.
2.In a separate bowl, combine the 1 cup of unbleached bread flour and 1 teaspoon of active dry yeast.
3.Add the lukewarm water to the bowl with the flour mixture and stir to combine.
4.Slowly add in the remaining 3 1/2 cups of unbleached bread flour, stirring until the dough starts to come together.
5.Add in the salt and the yeast mixture from step 1. Knead the dough by hand or with a stand mixer for 10 minutes.
6.Place the dough into a greased bowl, cover with a damp cloth, and let rise for 1-2 hours or until the dough has doubled in size.
7.Preheat your oven to 475°F (240°C) and place a baking stone or an inverted baking sheet on the middle rack.
8.Divide the dough into four equal pieces and shape each piece into a long, thin baguette.
9.Place the baguettes on parchment paper and let them rest for another 10-15 minutes.
10.Just before baking, use a sharp knife to make three to four shallow slashes across the top of each baguette.
11.Transfer the baguettes to the hot baking stone or baking sheet and bake for 20-25 minutes or until golden brown and crispy.
