Instructions

1.In a large mixing bowl, combine boiled and strained spinach, boiled and mashed potatoes, egg yolks, grated parmesan cheese, salt, and flour.
2.Knead the mixture until completely combined and the dough is smooth.
3.Take a small amount of dough and roll it out into a long, thin rope.
4.Cut the rope into small pieces and press lightly with a fork.
5.Bring a pot of water to a boil, with 3 tablespoons of salt added.
6.Add the gnocchi to the boiling water and cook until the gnocchi floats to the surface.
