Penne Al Funghi Porcini is a classic Italian pasta dish that is loved by many, including actor Pierce Brosnan. The dish is made with porcini mushrooms, which are known for their intense flavor and meaty texture. The dish is typically served hot, topped with Parmigiano-Reggiano cheese and fresh Italian parsley. Instructions

.Cook penne according to package directions in a large pot of boiling salted water, until al dente. Drain and reserve 1 cup pasta water.
.In a large skillet, heat the oil. Add the garlic and cook over moderate heat until fragrant. Add the mushrooms, 1/2 teaspoon salt and a pinch of black pepper. Cook over moderate heat, stirring occasionally, until browned, about 8 minutes.
.Add the wine and simmer over moderately high heat until reduced by half. Add the tomatoes and simmer over moderately low heat until the sauce is thickened, about 15 minutes.
.Add the pasta to the skillet and toss over moderate heat until coated in the sauce. If the sauce seems too thick, add a little of the reserved pasta water. Stir in the parsley and 2 tablespoons of grated Parmigiano-Reggiano. Serve the pasta in bowls, passing additional cheese at the table.
