Ingredients

500 g tomato puree
8 tablespoons tomato paste
1 can tomatoes , chunks
1 1/2 tablespoons dried oregano
3/4 tablespoon crushed red pepper flakes
1 teaspoon sugar
1/2 teaspoon salt
2 tablespoons olive oil
2 teaspoons mustard
2 tablespoons olive oil
2 onions , chopped
250 g blue cheese , preferably Gorgonzola or Danish Blue
250 g ricotta cheese
2 eggs
300 g frozen spinach
1 bunch broccoli , and stem washed , trimmed , and chopped into small bite-size pieces
12 no-boil lasagna noodles , spinach
1 cup mozzarella cheese
M's Green Gorgonzola Lasagna is a delicious and nutrient-packed twist on the classic lasagna recipe. Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large bowl, mix together the tomato puree, tomato paste, can of tomatoes, oregano, red pepper flakes, sugar, salt, and 2 tablespoons of olive oil. Stir until well combined.
3.In a separate bowl, mix together the mustard, blue cheese, ricotta cheese, and eggs until smooth.
4.Add the frozen spinach and chopped broccoli to the cheese and egg mixture, and mix thoroughly.
5.Grease a 9x13-inch baking dish with 1 tablespoon of olive oil. Spoon a thin layer of tomato sauce onto the bottom of the dish.
6.Layer 3 lasagna noodles onto the bottom of the dish. Spread a generous layer of the cheese and spinach mixture over the noodles, then spoon a layer of tomato sauce on top of the cheese. Repeat until all of the noodles, cheese mixture, and tomato sauce have been used.
7.Top the lasagna with a final layer of tomato sauce, and sprinkle the mozzarella cheese on top.
8.Cover the lasagna with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly. Let cool for 5-10 minutes before slicing and serving.
