Ingredients

2 fresh artichokes
1 lemon , juice of , squeezed
1 teaspoon salt
1 can artichoke hearts , drained and sliced
1 lb cream cheese , room temperature
8 ounces mascarpone cheese , room temperature
2 tablespoons all-purpose flour , sifted
1 cup parmesan cheese , grated
1/4 teaspoon fresh thyme leave
1/4 teaspoon crushed red pepper flakes
1 tablespoon fresh flat leaf parsley , chopped
1 fresh garlic clove , minced
5 green onions , chopped

1 package fresh spinach , chopped
8 slices crusty Italian bread
extra virgin olive oil ( to drizzle )

Instructions

1.Preheat the oven to 350°F (180°C). Place fresh artichokes in a large pot with enough water to cover them, lemon juice and salt. Bring to a boil, reduce heat to low, and simmer gently until artichokes are tender and the leaves pull out with ease.
2.Remove the artichokes from the pot, drain, rinse with cold water, and let cool. Once cooled, remove the leaves and shave away the flesh on top of the artichoke heart until only the meaty part of the leaves are left; cut into small slices.
3.In a mixing bowl, whisk cream cheese, mascarpone cheese, flour, and grated parmesan cheese until well combined. Mix in sliced artichoke hearts, thyme, red pepper flakes, garlic, green onions, salt, and pepper. Fold in chopped spinach and transfer the mixture into a baking dish.
4.Bake in preheated oven until the top is golden and bubbly and the dip is hot, for about 20-30 minutes. Allow the dip to cool for a few minutes and sprinkle freshly chopped parsley over the top. Serve immediately with crusty Italian bread that has been drizzled with extra virgin olive oil.
