Ingredients

4 boneless chicken breast halves , skins removed
32 -36 fresh sage leaves ( to total about 32 whole leaves to top chicken and 1 T. chopped sage for sauce )
8 thin slices prosciutto ( or 16 slices if you want full cutlet coverage )
4 -6 tablespoons olive oil
1/2 cup all-purpose flour
1/2 cup dry white wine
1/2 cup marsala or 1/2 cup port wine
1 cup chicken broth
ground black pepper
1/4 - 1/2 juice of a freshly squeezed lemon
1/2 - 1 cup shredded mozzarella cheese
Forevermama's Chicken Saltimbocca is a classic Italian dish that is incredibly flavorful and easy to make. Consisting of boneless chicken breast halves that are pounded thin and filled with fresh sage leaves and prosciutto, this dish is then pan-fried until golden brown and topped with a savory sauce made from white wine, Marsala or Port wine, and chicken broth. Instructions

1.Lay chicken flat between two sheets of plastic wrap or wax paper and use either a meat mallet or the back of a small saucepan to pound the chicken to an even thickness of about 1/4-inch.
2.Remove the plastic wrap and lay 7-8 sage leaves on one half of each chicken breast, overlapping one leaf over the other, then place 2 slices of prosciutto over the sage leaves.
3.Fold the empty half of the chicken breast over the covered half and press down gently.
4.In a large sauté pan over medium-high heat, add the oil and heat until hot.
5.Dredge the chicken in the flour, shaking off any excess, then place the chicken and sauté until golden brown and just cooked through (about 3-4 minutes per side).
6.Transfer the chicken to a platter and keep warm while making the sauce.
7.Pour off all but about 2 T. of oil and return the pan to medium heat.
8.Add the chopped sage and sauté for a few seconds to release the flavors.
9.Immediately add the wine, Marsala/Port, and chicken broth, increase heat to high and bring the sauce to a boil, scraping up any brown bits on the bottom of the pan.
10.Reduce the heat to medium and let the sauce simmer until slightly thickened (about 10 minutes).
11.Sprinkle the mozzarella cheese over the chicken, spoon some sauce over the chicken, and broil until the cheese is lightly golden and bubbly.
12.Toss pepper and lemon juice over the chicken and serve hot.
