Instructions

.Drain the soaked beans and place them in a large pot along with the bay leaf, 1 teaspoon of salt, and enough water to cover by about 2 inches. Bring to a boil, then reduce the heat to low and simmer until the beans are tender but still hold their shape, about 45 minutes.
.While the beans are cooking, core and roughly chop the apples (no need to peel them) and melt the butter in a large pot over medium heat. Add the apples and cook, stirring frequently, until they begin to soften, about 10 minutes.
.Add the cloves, cinnamon, and lemon zest to the pot with the apples, and stir to combine. Remove the bay leaf from the pot with the beans and add the beans and their cooking liquid to the pot with the apples.
.Add enough extra hot water to the pot to achieve your desired soup consistency (either 6 cups for a thicker side dish or 8 cups for a soup). Add the remaining 1 teaspoon of salt and bring the soup to a simmer. Cook over low heat for about 10 minutes, until the flavors have melded and the soup is hot throughout.
.Taste the soup and adjust the seasoning as necessary, then serve hot.
