Ingredients

1 recipe sicilian style pizza dough
1/2 cup pizza sauce
3 large onions , thickly sliced
1 1/2 cups beef stock or 1 1/2 cups chicken stock
1/2 cup dry marsala or 1/2 cup port wine
1 bay leaf
1/2 teaspoon thyme
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons olive oil
4 ounces romano cheese ( half cut into 1/4 dice , half finely grated )
2 tablespoons Italian style breadcrumbs
Palermo style pizza is a traditional Italian pizza that originates from Palermo, the capital city of Sicily. Instructions

1.Preheat oven to 500°F.
2.In a large skillet, heat olive oil over high heat.
3.Add sliced onions and sauté until softened, about 5 minutes.
4.Reduce heat to medium, and add beef/chicken stock, marsala/port wine, bay leaf, thyme, salt, and black pepper.
5.Let cook until the mixture is reduced to about half a cup.
6.Roll out the sicilian style pizza dough onto a pizza pan or stone.
7.Top the dough with pizza sauce.
8.Spread the onion mixture evenly over the sauce.
9.Sprinkle diced romano cheese over the top.
10.Add Italian style breadcrumbs on top.
11.Bake for 10-12 minutes, or until crust is golden brown.
