Ingredients

1 can artichoke heart , drained and sliced
4 tablespoons butter
1/2 cup onion , finely chopped
4 ounces pancetta , cut into thin strips
salt & freshly ground black pepper
1/2 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme
1/3 cup freshly grated parmigiano-reggiano cheese
8 ounces penne ( or enough for four )

Instructions

1.Cook the penne in a large pot of boiling salted water until al dente. Drain and reserve 1/2 cup of the cooking water.
2.In a large skillet, melt the butter over medium heat. Add the onion and pancetta and cook until the onion is soft and the pancetta is crisp, about 8 minutes. Season with salt, pepper, and thyme.
3.Add the artichokes and reserved cooking water to the skillet and simmer for 2 minutes.
4.Add the penne to the skillet and toss well with the sauce. Remove from the heat and stir in the parmigiano-reggiano cheese.
