8 -12 ounces romano cheese

2 tablespoons olive oil
16 ounces mixed mushrooms

Instructions

1.Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
2.Cook the lasagna noodles according to the package instructions until al dente. Drain and rinse with cold water.
3.In a large skillet, heat olive oil over medium heat. Add chopped onion, mushrooms, and green pepper. Cook until the onions are translucent.
4.Add crushed tomatoes or marinara sauce and cook for another 5-10 minutes.

Repeat the layers until all of the ingredients have been used up, finishing with a layer of shredded mozzarella cheese and remaining parmesan cheese.
7.Cover the baking dish with foil and bake for 25 minutes. Remove the foil and continue to bake for an additional 25 minutes, or until the cheese is golden and bubbly on top.
