Ingredients

4 cups chicken broth
1 tablespoon butter
3/4 cup sweet onion , such as Vidalia , finely diced
1 1/3 cups arborio rice
1/2 cup dry white wine
1/4 teaspoon salt
4 ounces cremini mushrooms or 4 ounces button mushrooms , thinly sliced
1/2 lb fresh asparagus , thinly sliced on the diagonal
1/2 cup freshly grated parmesan cheese
1 tablespoon olive oil or 1 tablespoon butter
2 cups shredded cold cooked chicken
2 tablespoons chopped fresh parsley
Mushroom Asparagus Risotto With Crisped Chicken is a sumptuous and filling meal. It is a classical dish which is perfect for a romantic dinner or as a weeknight meal for the family. This creamy, cheesy and fragrant risotto is loaded with earthy mushrooms, crisp asparagus and savoury chicken. Instructions

1.Heat chicken broth in a pot and keep it on low heat.
2.Melt butter in a heavy-bottomed pot and sauté onions until they turn transparent.
3.Add arborio rice and cook for 2 minutes until coated.
4.Pour wine in and keep stirring, until it evaporates, for about 3 minutes.
5.Add 1/2 cup of hot broth at a time and keep stirring, letting the rice absorb the broth.
6.When you are adding the last batch of broth, add sliced mushrooms and asparagus and let it cook for 5-7 minutes.
7.Turn off the heat and add parmesan cheese.
8.Heat olive oil in a separate pan and add chicken. Cook until crispy.
9.Serve the risotto with crisped chicken and sprinkle with chopped parsley on top.
