Ingredients

1 lb spaghetti
1/4 cup olive oil
2 tablespoons butter
1 large onion , chopped
2 garlic cloves , minced
1 cup tomatoes , peeled and chopped
1 tablespoon tomato paste
3/4 cup chicken broth
1/2 cup white wine
1 pinch dried sage
1 pinch crushed red pepper flakes
salt and pepper
2 dozen mussels , scrubbed and de-bearded ( I usually use about 3 dozen )
1 tablespoon fresh parsley , chopped
2 tablespoons parmesan cheese or 2 tablespoons romano cheese

Instructions

6.Discard any unopened mussels.
7.Remove the pot from heat and toss the spaghetti into the sauce.
8.Serve immediately, topped with chopped fresh parsley and grated parmesan or romano cheese.
