Ingredients

1 cup black beluga lentils
2 1/2 cups water
1 pinch salt
1 tablespoon olive oil
1 onion , chopped
4 hot Italian sausage links
1 clove garlic , crushed
1 package crimini mushrooms , sliced
1 eggplant , chopped
1 small hot pepper , chopped
salt and ground black pepper to taste
1 can diced tomatoes
This Spicy Italian Sausage and Lentil Casserole is a delicious and hearty meal that is perfect for a chilly evening. Instructions

1.Preheat oven to 350°F (175°C).
2.Rinse the lentils in a colander. In a medium saucepan, bring the water to a boil, add the lentils and a pinch of salt. Cover and simmer gently until tender, about 30 minutes. Drain any remaining water.
3.Meanwhile, heat olive oil in a large skillet over medium-high heat. Sauté the onion for 5 minutes until light brown.
4.Remove the sausages from their casing and add them to the skillet with garlic. Cook until sausages are brown and crumbly, stirring occasionally. Add the mushrooms, eggplant, and chili pepper with salt and black pepper and sauté until the eggplant is browned and the mushrooms are tender.
5.Stir in the tomatoes (with juices) and add the cooked lentils. Mix well and transfer the mixture to a large casserole dish.
6.Bake uncovered, for 25-30 minutes or until the top is crispy and golden.
