1 pinch red pepper flakes
1 cup spinach , frozen and squeezed dried ( may substitute pesto for spinach mixture )
24 wonton wrappers
2 canned pasta sauce or ( 26 ounce ) jarred pasta sauce
8 ounces mozzarella cheese , grated
3 ounces parmesan cheese , grated
4 ounces ricotta cheese ( half reserved for frosting if desired )
8 cherry tomatoes , for garnish
8 small basil leaves , for garnish

Instructions

1.Preheat oven to 375°F.
2.In a small saucepan, heat olive oil over medium heat until hot.

6.Grease a muffin tin and line each cup with a wonton wrapper.

9.Add another layer of wonton wrappers and repeat layers of sauce, spinach mixture, and cheese.
10.Bake in the oven for 20-25 minutes or until the cheese is melted and bubbly.
11.Top with cherry tomatoes and basil leaves for garnish.
