Ingredients

8 ounces dry penne pasta or 8 ounces cut ziti pasta
5 -10 garlic cloves , cut into thin slices
1 tablespoon olive oil
1 can tomatoes , wedges drained and cut in half
ground black pepper
crushed red pepper flakes , to taste
1/4 cup snipped fresh parsley
2 tablespoons capers , drained
1/3 cup shredded parmesan cheese
shredded parmesan cheese , for serving

Instructions

1.Preheat the oven to 475 degree F.
2.Put all the peppers cut-side down on a foil-lined baking sheet.

4.Put in a brown bag and let stand for 5-10 minutes, then peel off the skins.
5.Cook the pasta according to package directions.
6.While the pasta is cooking, take a large skillet and heat olive oil over medium heat.
7.Add the garlic and cook until fragrant (not brown).
8.Add tomatoes, black pepper, crushed red peppers, parsley, and capers to the skillet and cook covered till the mixture becomes saucy.
9.Add in the roasted peppers and let stand for a minute.
10.Place the drained pasta into the skillet and toss all ingredients well.
11.Top with parmesan cheese and serve with additional parmesan cheese.
